Feeding the People {a large family’s 2 week menu with recipe links)

January started out with a bang for us; not only are we in need of a meeting what feels like an impossibly large deductible for an unforeseen roof repair, we also found ourselves on the hook for a van repair totaling nearly as much… in addition to some other financial stuff we knew was coming. Suffice it to say, it’s a beans and rice kind of month for our family. Thankfully, we all really like beans. And rice. And not only can I get wicked creative when it comes to combining the two, I am also blessed to have a stockpile of frozen meat and berries in the freezer, hens laying nearly a dozen eggs per day, twenty pounds of potatoes, and plenty of butter, flour, and other staples. No one’s going hungry here, no matter how lean the bank account might look!

Dinner: Instant Pot 15 Bean Soup and bread

Monday 16th
Monday: Cracker Barrel Hashbrown Casserole and boiled eggs
Lunch: leftovers
Dinner: Lentils over rice

Tuesday 17th
Breakfast: Buttermilk Blueberry Breakfast Cake
Lunch: mini pizzas
Dinner: Chicken curry with broccoli and cauliflower

Wednesday 18th
Breakfast: Crepes with cream cheese and strawberry sauce
Lunch: leftovers
Dinner: Burrito bowls (make chicken in Instant Pot)

Thursday 19th
Breakfast: bagels and cream cheese
Lunch: leftovers
Dinner: baked potatoes, broccoli, bacon bits, and cheese

Friday 20th
Breakfast: Ham and Cheese Hashbrown Casserole
Lunch: leftovers
Dinner: Instant Pot Tikka Masala

Saturday 21st
Breakfast: sausage and cheese muffins
Lunch: taco skillet
Dinner: Instant Pot Split Pea and Ham soup with bread

Sunday 22nd
Breakfast: Morning Glory Muffins
Lunch: leftovers
Dinner: Homemade pizzas

Monday 23rd
Monday: crispy cheese and bacon potatoes and scrambled eggs
Lunch: leftovers
Dinner: Crockpot Santa Fe chicken

Tuesday 24th

  1. Any recommendations in dealing with picky eaters? We have 4 little people and I try to introduce new foods and have them at least try things. But with them all 5 and under it’s a constant battle because they are all in the typical picky eater range. They eat well until they are about 2 years old and then they suddenly out of the blue decide they won’t eat things that they once ate, and trying new foods is like the worst thing possible. I don’t want it to be a battle. I like to keep things simple but sometimes this feels so complicated to feed a family. Just curious how you deal with this with many more kids. Thanks!

    • When our kids have toyed with the concept of being picky eaters, we’ve done two things: number one, dicern whether or not this is a real aversion (ie, a sensory issue or something else that would preclude actually eating said item) and number two, remind ourselves that it’s o.k. to not become short order cooks. We keep moving forward with our typical adventurous eating, but if someone doesn’t want to take part, that’s o.k. They can opt out. And guess what? Unless it’s an actual issue (an allergy, a real inability to eat anything of a particular texture) you just, ummmm…. well, you miss out on that part of the meal. No extra snacks, no apologies. Is it sometimes tough? You bet. But it’s one of those “pays off in the long run” strategies that has made our kids more likely to dig into a big bowl of curry and me able to enjoy cooking without stress!
