It’s pseudo-spring here in western Washington– warm and clear one day, cool and overcast the next. The only thing you can count on this time of year is frogs singing, lots of mud, and rain in all its glorious forms. From downpour to drizzle, we do it all in Washington. I know that sounds depressing to some of you, but others (and you know who you are) are more than happy to join me in appreciating the sunshine and the puddles.
The only thing that really gives me hiccups this time of year is deciding what direction to take with meal planning. It’s not grill weather, exactly. But it’s not really casserole time, either. That’s why this menu has a somewhat split personality. Cozy crockpot favorites right alongside a meal featuring roasted vegetables drizzled in a light, tangy sauce. I guess I’m a glass half full kind of person in general, but to me, this is the best of both worlds. Spring, and the return of asparagus and delicate purple potatoes … and winter, with hearty family dishes that warm the cool evenings.

Lunch: turkey taco skillet
Dinner: cheese quesadillas
Wednesday 9th
Breakfast: Mamaw’s egg casserole
Lunch: PACK turkey wraps, fruit salad
Dinner: Creamy Crockpot Cheesy Chicken and Broccoli over rice**
Dessert: Monkey Squares**

Breakfast: sausage links, hashbrowns

Dinner: Dijon Roasted Veg & Sausage
Friday 11th
Breakfast: Farmer’s Country Breakfast

Dinner: Thai Lettuce Wraps** (from Family Feasts for $75 a Week)

Lunch: spaghetti
Dinner: homemade pizza
Monday 14th
Breakfast: omlettes
Lunch: leftover pizza
Dinner: Moroccan Chicken (crockpot)
Tuesday 15th
Breakfast: pancakes
Lunch: leftovers
Dinner: black bean tortilla stackups
Wednesday 16th
Breakfast: blueberry muffins
Lunch: leftovers
Dinner: crockpot Santa Fe Chicken** (we use this as burrito filling)
Dessert: brown sugar oatmeal coconut chewies**
Thursday 17th
Breakfast: biscuits and gravy
Lunch: leftovers
Dinner: Slowcooker Roast Chicken and Gravy (made with this seasoning) mashed potatoes, peas
Friday 18th
Breakfast: scrambled eggs and toast
Lunch: leftovers
Dinner: Lentil soup, bread
Saturday 19th
Breakfast: apple dumplings
Lunch: mini pizzas
Dinner: Spicy Romano Chicken Pasta**
Sunday 20th
EASTER
Breakfast: empty tomb rolls, bacon, eggs
Lunch: leftovers
Dinner: Ham, mashed potatoes, broccoli, cheese and rice casserole, green beans, rolls
Monday 21st
Breakfast: sausage links and hasbrowns

Dinner: Tortilla Soup with Black Beans
Dessert: Bible Study Carrot Cake
